Sweet Potato Casserole
2 cups of stevia
1 eggs
4 tablespoon of butter (or 2 of butter and 2 of coconut oil)
1/2 cup of milk
1/2 teaspoon of vanilla
Top
1/2 cup of brown sugar
1/3 cup of flour
3 tablespoon of butter
1/2 cup of chopped pecans
30 minutes in 325o.F

Gingerbread Cookies
3 cups flour (it can be 2 all purpose and 1 whole)
2 teaspoon ground ginger
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 teaspoon nutmeg
3/4 cup (1 1/2 stick) butter, softened
3/4 cup fimly packed brown sugar
1/2 cup molasses
1 egg
1 teaspoon of natural vanilla extract
MIX First 6 ingredients. Set aside. Beat butter and sugar with electric mixer or by hands intil light and fluffy Add molasses, egg and vanilla, mix well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a disk. Wrap in plastic wrap. Refrigerate for 4 hours or overnight.
ROLL out dough to 1/4-inch thickness on lightly floured work surface. Cut into gingerbread with 5 inch cookies cutter. Place 1 inch apart on ungreased baking sheets.
BAKE in preheated 350o. F oven 8 to 10 minutes or until edges of cookies just begin to brown . Cool on baking sheets 2 minutes. Remove to wire racks, cool completely. Decorate cookies by piping ddesigns

Coconut Pudim with Prune Sauce
Ingredients:
• 1/2 liter of milk
• 250 ml coconut milk (which can be obtained by liquefying up and shredded coconut 250 mg with 250 ml of water)
• 250 mg of shredded coconut
• 2 tablespoons of coconut oil
• 4 level tablespoons of cornstarch
• 5 tablespoons of Stevia powder
Preparation:
• Dissolve starch in milk, bring to a boil over low heat with stevia, stirring constantly until thickened.
• Add coconut milk, coconut oil and stir to incorporate (it is added only after it thicken coconut milk may curdle).
- Place in container or own way and take the refrigerator for at least two hours until set.
Prune Sauce
- 5 tablespoons of sugar
- 15 prunes
Preparation:
Place the sugar in a pan and let go melting to form the caramelized syrup. I always need to add a little water to the syrup become creamy.
When the water is incorporated to the caramel, add ameixar stirring until the point.
You can be placed it over or under the pudin before or after to cool.

Italian Meringue (Buttercream)
Full recipe;
- 5 eggs white
- 250g sugar
- 1 teaspoon vanilla
- 1/2 cup of water
Half recipe:
- 3 eggs white.
- 150g sugar
- 1/4 cup of water
- 1/2 teaspoon vanilla
Pour in a small pan the thermometer, sugar and water. DO NOT STIR.
Put the pean in a medium heat till the syrup reach 245o.F.
Pour the syrup slowly and stead speed to the whipped eggs white. Beat 5/10 minutes

As Children...
I can remember when I was five years old the first time I picked up a flower and how I was marveled... It was a pink hibiscus. Every child has that feeling the first time they admire a flower.
May we never lose this enchantment with life that every child has. "The Kingdom of God belongs to such as children" said Jesus.
May we to be always in awe and amazement with the Lord's creation, the miracles are around us.
“Assuredly, I say to you, unless you are converted and become as little children, you will by no means enter the kingdom of heaven" (Matthew 18.3)
We need to become like children again. We need to bring back the awe and excitement at the rain, the wind blowing to the tree, the beautiful flowers appearing out of the ground.

Homemade Mustard
Ingredients:
50g of mustard powder
½ cup filtered water (or more, up to the point of your liking)
1 tbsp 'milk whey "(optional)
1/4 teaspoons salt tea
1/2 lemon juice
2 cloves garlic, crushed
1/4 cup of honey
1 pinch of ground ginger
1 pinch of curry
1 pinch of sweet paprika
Preparation:
Mix all ingredients vigorously until a smooth paste is formatted. If necessary, add more water to adjust the consistency.
Pour it into a pot with a lid and leave at room temperature for 3 days.
Then transfer to the refrigerator and consume normally.

Ciabatta Bread with Sea Salt and Rosemary
Ingredients:
• 500 g flour for bread
• 450 ml o f water
• 1 teaspoon salt
• 2 tsp dry yeast
• Olive oil and more for greasing the pan
• Sea salt and rosemary to sprinkle on the bread's top
Preparation:
1.Get two medium bowls.
2.In a bowl combine flour and salt
3.Dissolve the yeast in the water and pour into bowl with flour.
4.Mix the ingredients with a spoon until combined and then start to knead the dough. Knead for 5 minutes, at this point the appearance of the dough will change slightly but will remain wet and sticky .
5.Grease the other bowl with olive oil and transfer half the dough. Sprinkle the dough with olive oil and let it rest.
6. Grease the other bowl with the other half dough and let it rest aside also. Cover both bowls with a cloth. Let the dough ferment for 6 hours.
Transfer dough to greased pans with olive oil and cover with a cloth.
7. Allow to rise for another 2 hours or until doubled in size.
8. Sprinkle olive oil, sea salt and rosemary.
9. Pre heat oven to 395o. F and bake for about 20 minutes and after 5 minutes to broil.
10. Remove from oven and let cool on a rack.
Enjoy your Italian Ciabatta Bread with olive oil or butter.

Foods You Should Be Eating Every Day
As a smart homemakers we should
prepare health food for our family. Then we must know what kind of foods
are good to eat daily. Remember; "food is medicine" and if we do
not invest in health products we can spend in medicine.
I found in the internet these
blessed 10 foods they call superfoods. We should look forward to eat them
more often. I add some more we usually try to eat everyday.
1. Flaxseeds
Flaxseeds are an easy way to add a
big dose of fiber into your diet. They can be purchased in the bulk food area
of any grocery store and can be sprinkled over salads, fish or any type of meal
or snack. To give you an idea of just how healthy these are, a
single tablespoon of ground flaxseed sprinkled over cerea, yogurt or salad
provides an easy 2.3 grams of fiber. I usually buy the seeds and I to ground
them in to the blender and storage in a plastic container.
2. Beans
The soluble fiber found in beans
soaks up cholesterol, allowing your body to dispose of it before it sticks to
your artery walls. They’re also proven to be one of the best sources of
antioxidants. Beans can be incorporated into your diet in many ways. You can
whip up a nice batch of chili with tons of kidney beans, you can serve them
fresh or you can work them into a salad. As a Brazilian I just love bean. It is
part of the daily meal (I mean lunch and dinner). We cook it in a
pressure cook, but we can cook in a slow cooker, after over soaking all night
at least or for best result 24 hours.

Blueberries
If you’re going to eat any fruit,
make it blueberries. Blueberries are a better source of antioxidants than 40
other common fruits (such as strawberries and raspberries). While all berries
are healthy (and great sources of antioxidants) you’ll get the most bang for
your buck with this delicious fruit. Consider sprinkling them over greek yogurt
or using them in a fruit salad.
4. Yogurt
A single serving of yogurt will give
you a significant amount calcium for the day. In addition to calcium, most
yogurts are a great source of probiotics. Probiotics help protect your stomach
against harmful bacterias that could lead to infection or illness. Starting
your day off with a cup of yogurt (and blueberries on top) will work wonders

5. Oats
If you’re going to kick your day off
with a cup of yogurt, consider adding a spoonful (or two) of oats. Oats have
been proven to lower cholesterol and blood pressure, making them a great choice
for adults looking to reduce these levels. 1 ½ cups (375 mL) of cooked
oatmeal or thee packets of instant oatmeal provide enough beta-glucan to lower
blood cholesterol by about five percent and heart attack risk by about 10
percent.

Broccoli and Spinach
Much like blueberries for fruit,
broccoli should be your number one choice when it comes to vegetables. The
sulfur compounds found in broccoli which signal our genes to increase production
of enzymes and detoxify potentially cancer-causing compounds. Broccoli can be
eaten uncooked with a low-fat veggie dip or can be cooked and used a side dish,
worked into a salad or incorporated into a casserole. The possibilities are
endless.
Spinach boasts so many health
benefits. It is a great source of vitamins A, C and K, as well as
some fiber, iron, calcium, potassium, magnesium and vitamin E. You can eat it
raw in salads or cook it up and serve it alongside a chicken breast. If you
don’t like the taste of spinach, throw a handful into a homemade smoothie. You
won’t be able to taste it at all – and your body will still reap the
benefits.
7.
Eggs
Eggs are a great source of high
qualily protein. They are also known to fill you up, preventing you from
snacking on unhealthy mini-meals throughout the day. In addition to these
benefits, eggs also help keep your eye health in check. Eating one (or two)
eggs in the morning with fresh fruit or whole grain toast is a great way to
give your body the nutrients it needs to keep you fuelled throughout the day.

9. Mixed Nuts
Mixed nuts are a great source of
heart-healthy unsaturated fats. A recent study reveals that adults who consumed
nuts on a regular basis were likely to live 2 years longer than their
non-nut-eating counterparts. Walnuts and almonds are your best options when it
comes to choosing which nuts to eat.

Oranges
Eating one large, fresh orange will
give you 100 % of your daily recommended Vitamin C. Likewise, one cup of 100%
pure orange juice do the same. One of the best fruit to incorporate in our
daily diet.

Celebrating our First Anniversary
This week we are celebrating our first anniversary on May/11. The Lord has blessed us abundantly. We pray He will continue to bless us for many more years to come May you enjoy these pics with us.

Spring in Savannah, GA
I was so excited to see how it would be the spring in Georgia, because this is my first year here. Last year we were in NJ among the snow. My hubby had told me the spring in Savannah, the city where we moved is gorgeous. I thought it would be just next month but today the birds were singing so loud at the morning and at the afternoon I saw these beautiful flowers blooming in our garden.
May the fragrance from the south winds blows upon the north soon! How wonderful to see life resurging again!

Delicious Homemade Granola
Ingredients
2 tablespoons of coconut oil
1 / 2 cup sesame seeds (optional)
1/2 cup of honey
1 tablespoon vanilla
2 cups of oat meal (big flakes)
1/2 cup sliced almonds (walnuts, pecans or Brazilian nut)
1/2 cup shredded coconut
1/2 cup of raisins
1 tablespoon ground cinnamon
Preparation:
- Mix well all the ingredients, except the honey.
- Pass everything in a large baking sheet, so that the mixture forms a layer.
Toast at 250/300 degrees F, opening the over each 10/10 min and stirring. About 1 hour until crisp and lightly toast. Add the honey and mix well.
- Let cool and store in a container
----Ok, now you have a Delicious Homemade Granola which you can serve on the top of yogurt, fruit salad, ice cream or even eat alone.
