Recipe:

Beets are rick in iron and beta-carotene. I use:

- 1/2 of a small  organic beet and carrot

- 1 small glass of orange juice 

- 1 small glass of natural water

- Natural Stevia Sweetner, (no sugar, please)

Homemade Bone Broth



Powder Bone Both? - No, this is for lazies. 
We homemade our own Bone or Chicken Broth.

Bone Broth is rich in collagen and good for our own bones, joints, nails, hair and skin. Then, it increases the health.

Ingredients for the Bones Broth:

1,5 kg/2,5 lb of Marrows Bones (ask the butcher guy to cut the bones in smalls pieces)
some Ribs (optional)
1/2 lemon or apple cider vinegar or half of both
3 carrots chopped
1 onion chopped
3 celery chopped
2 leeks chopped
1 tablespoon thyme (better fresh or dried)
1 teaspoon cayenne pepper
2 bay leaves
Water enough to keep everything always covered.

Washed the marrow bones with boiling hot water, leaving them at least 1 hour soaking in hot water and 1 lemon squeezed.

Transfer the bones and the vegetables to a Crock Pot  to cook for at least 12 hours or more, some people leave for 24 hours. If you do not have one you can use a regular big pan and cook on the stove top, very slowly, for the same amount of hours.

After remove the fat add the vegetables (carrots, celery s, l)  and spices (thyme, pepper, bay leave) lemon and salt. Bring to boil again and reduce to heat to low.

Let it cook for at least 12 hours till 24 hours. How much more it is better. If you do not have time in one day, you can cook some hours in one and some ours in another.

After to cook, let it to cool down and refrigerate to remove the fat that will stay to the top. Some people remove the vegetable, I just remove the bones, the vegetables I leave to use with the broth.

EaSy HoMeMaDe WhIpPeD cReAm




I love whipped cream. I am glad I found this way to make homemade one, it looks so easy. Sorry it is a little merchandise but it is worth, better than to buy the heavy cream, whipped with the mixer and put in the bags to decorate. Specially because the video is showing Mrs. Anderson, a beautiful homemaker, mother of ten! Wow...




After watching this video i started to search in the Internet to see the price of this brand Isi and i figured out it is very expensive! Some from $80.00 more than $100.00 and more the charges. Then i searched for cheaper Whipped Cream Makers and I found out there is many price in Amazon, reasonable ones for $27.99,  $34.17, $54.99 and we need to buy the charges also with the gas to maker the cream fluffy. Charges cost about 10 for $12.00 and 24 for $18.00. Praying for the Lord to lead me to buy the BBC one: Best, Cheaper  and Beautiful Whipped Cream Maker.
 I can not wait to decorate the cakes for my kids.
 We love cake and whipped cream!

HOMEMADE NUTELLA





  • 2 cups raw hazelnuts (240g)
  • 1 1/2 tbsp pure vanilla extract
  • 1/4 cup cocoa powder
  • 1/4 cup + 2 tbsp pure maple syrup, xylitol, or unrefined sugar
  • pinch stevia, or 1 tbsp additional sugar
  • 1/4 tsp + 1/8 tsp salt
  • optional: 2 tsp oil for extra smoothness
  • 1/2 cup milk of choice


Instructions

Homemade Nutella Recipe: Roast hazelnuts for 6-8 minutes at 400 F. Rub them together in a paper towel to get the skins off. (It’s ok if a few stubborn skins won’t come off.) In a Vita-mix or food processor, blend the nuts until they’ve turned to butter, then add all other ingredients and blend a long time until it’s smooth like Nutella! (I think I blended off-and-on for a full two minutes. It’s extra-creamy in a Vita-mix, but a Cuisinart food processor works as well.)

Easy Pizza





- 2 cups of all purpose flour for the dough + 1/2 cup to knead
- 1 tablespoon of Fast Raising Dry Yeast (1 envelope)
- 1/4 teaspoon of salt
- 1 tablespoon of salt
- 1 tablespoon of sugar or honey 2/3 cup lukewarm water (100 F) + 2 tablespoon to get a good consistence
- 1 cup of tomato sauce
- 350 g of mozzarella cheese

Dissolve the yeast in the water and let to rest for 10 minutes.
Add salt and sugar and mix.
Add 1 cup of flour and start to mix with a spoon + second cup.
Start to knead with the spoon and then you can continues with the hand adding other 1/2 cup of flour slowly till you get a good consistence. Knead for 5  minutes.
Let the dough rest for 30 minutes or till double size.
Open the dough with the cooking roll the size of your pizza pan. I mark on the countertop the size of the pizza pan to get the perfect shape.

Add the tomato sauce on the pizza dough and cover with muzarella cheese and the others ingredients you like; jalapeño, spinach, onions, cooked eggs, sausages, etc.
Sprinkle some oregano.

Bake for 25  minutes in 350 o F.

Ricotta and Spinach Crepes




Ingredients
Dough:
1 cup wheat flour
1 cup  of milk
1 tablespoon of corn starch
2 eggs
1 tablespoon vegetable oil
1 tablespoon of grated cheese

Filling
250 gr of ricotta
1 bunch of spinach
salt and pepper to taste


Dough
Beat all ingredients in a blender.
Pour the dough in a bowl and refrigerate for at least half hour. Grease a pan for pancakes or a round pan with a little oil, pour a little of dough, 2 tablespoon in the center of the pan and spread the dough until covering the bottom, wait fry and then turn on the other side.
Repeat with all the dough and set aside.

Filling
Season the ricotta with salt and pepper to taste.
Sauté the spinach with onions and vegetable oil, a pinch of pepper, salt and water for 5 minutes.
Drain, and mix with seasoned ricotta.
Put a little of the mixture in one of the center of the dough and form the rolls of pancakes and place in an ovenproof dish.
Cover with the tomatoe sauce or other of your choice and bake for 10 minutes.
It can be white or red sauce.

The Perfect Scone...

...is light, tender, slightly sweet, and better eaten warm right out of the oven.



MAKE A WELL. The biggest fail when making scones es over mixing. That's where the well helps. When you pour the cream mixture in the center -as opposed to all over - it's quicker to stir together the liquid and dry ingredients.

STIR LIGHTLY.  A fork works vest for cutting through the wet and dry ingredients. A spoon or spatula tends to create clumps as you stir. combine until just moistened and a fey dry spots remain. You don't want to over mix.

KNEAD GENTLE. A light touch is key . Unlike yest breads, which call for several minutes of kneading to develop gluten, knead scone dough just until it holds together. Over kneading creates a tough crust and a flat scone.

Delicious Chicken Pie Blender



Ingredientes:
500 ml milk
250 ml of Safflower oil
3 cups all-purpose flour
1 teaspoon of oregano
4 eggs
2 tablespoons baking powder 
25 g grated Parmesan cheese
salt to taste (optional)

For the filling:
1 large chicken breast cooked and shredded in small pieces or minced
1 cup of cooked peas can 
1 cup of  corn cooked
100 ml of tomato sauce
1 chopped tomatoes
1 onion, chopped
olives
oregano

PREPARE
Turn the oven to 350 ° F and let heat
Beat all the dough ingredients in a blender except the cheese, and in the last seconds add the yeast

Mix all the filling ingredients in a bowl
Pour half the batter into a large baking dish stainless or aluminum, smeared with plenty of butter, spread the filling over the dough and cover with the other half of the dough.
Arrange with a spoon the holes that remain, sprinkle parmesan cheese and place to bake until golden brown, about 30 to 40 minutes, depends on the oven.

Sweet Potato Casserole



2 cups of stevia
1 eggs
4 tablespoon of butter (or 2 of butter and 2 of coconut oil)
1/2 cup of milk
1/2 teaspoon of vanilla

Top
 1/2 cup of brown sugar
1/3 cup of flour
3 tablespoon of  butter
1/2 cup of chopped pecans

30 minutes in 325o.F

Gingerbread Cookies



3 cups flour (it can be 2 all purpose and 1 whole)
2 teaspoon ground ginger
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 teaspoon nutmeg
3/4 cup (1 1/2 stick) butter, softened
3/4 cup fimly packed brown sugar 
1/2 cup molasses
1 egg
1 teaspoon of natural vanilla extract

MIX First 6 ingredients. Set aside. Beat butter and sugar with electric mixer or by hands intil light and fluffy Add molasses, egg and vanilla, mix well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a disk. Wrap in plastic wrap. Refrigerate for 4 hours or overnight.

ROLL  out dough to 1/4-inch thickness on lightly floured work surface. Cut into gingerbread with 5 inch cookies cutter. Place 1 inch apart on ungreased baking sheets.

BAKE in preheated 350o. F oven 8 to 10 minutes or until edges of cookies just begin to brown . Cool on baking sheets 2 minutes. Remove to wire racks,  cool completely. Decorate cookies by piping ddesigns

Coconut Pudim with Prune Sauce

 
 

Ingredients:

1/2 liter of milk
• 250 ml coconut milk (which can be obtained by liquefying up and shredded coconut 250 mg with 250 ml of water)
250 mg of shredded  coconut
2 tablespoons of coconut oil
4 level tablespoons of cornstarch
5 tablespoons of Stevia powder


Preparation:

Dissolve starch in milk, bring to a boil over low heat with stevia, stirring constantly until thickened.
Add coconut milk, coconut oil and stir to incorporate (it is added only after it thicken coconut milk may curdle).
- Place in container or own way and take the refrigerator for at least two hours until set.

Prune Sauce
- 5 tablespoons of sugar
- 15 prunes

Preparation:
Place the sugar in a pan and let go melting to form the caramelized syrup. I always need to add a little water to the syrup become creamy.
When the water is  incorporated to  the caramel, add ameixar stirring until the point.
You can be placed it over or under the pudin before or after to cool.

Italian Meringue (Buttercream)



Full recipe;
- 5 eggs white
- 250g sugar
- 1 teaspoon vanilla
- 1/2 cup of water

Half recipe:
- 3 eggs white.
- 150g sugar
- 1/4 cup of water
- 1/2 teaspoon vanilla

Pour in a small pan the thermometer, sugar and water. DO NOT STIR.

Put the pean in a medium heat till the syrup reach 245o.F.

Pour the syrup slowly and stead speed to the whipped eggs white. Beat 5/10 minutes

Ciabatta Bread with Sea Salt and Rosemary




Ingredients:

500 g flour for bread

• 450 ml o f water

• 1 teaspoon salt

• 2 tsp dry yeast

• Olive oil and more for greasing the pan

• Sea salt and rosemary to sprinkle on the bread's top


Preparation:

1.Get two medium bowls.

2.In a bowl combine flour and salt

3.Dissolve the yeast in the water and pour into bowl with flour.

4.Mix the ingredients with a spoon until combined and then start to knead the dough.
Knead for 5 minutes, at this point the appearance of the dough will change slightly but will remain wet and sticky .

5.Grease  the other bowl with olive oil and transfer half the dough. Sprinkle the dough with olive oil and let it rest.

6. Grease the other bowl with the other half dough and let it rest aside also. Cover both bowls with a cloth. Let the dough ferment for 6 hours.

                                        Transfer dough to greased  pans with olive oil and cover with a cloth.



 
 
7. Allow to rise for another 2 hours or until doubled in size.

8. Sprinkle olive oil, sea salt and rosemary.

9. Pre heat oven to 395o. F and bake for about 20 minutes and after 5 minutes to broil.

10. Remove from oven and let cool on a rack.


Enjoy your Italian Ciabatta Bread with olive oil or butter.

Delicious Homemade Granola



   
Ingredients


2 tablespoons of coconut oil

1 / 2 cup sesame seeds (optional)
1/2 cup of honey
1 tablespoon vanilla
2 cups of oat meal (big flakes)
1/2 cup sliced ​​almonds (walnuts, pecans or Brazilian nut)
1/2 cup shredded coconut
1/2 cup of raisins
1 tablespoon ground cinnamon

 Preparation:

- Mix well all the ingredients, except the honey.
- Pass everything in a large baking sheet, so that the mixture forms a layer.
Toast at 250/300 degrees F, opening  the over each 10/10 min and stirring. About 1 hour until crisp and lightly toast. Add the honey and mix  well.
- Let cool and store in a container
----Ok, now you have a Delicious Homemade Granola which you can serve on the top of yogurt, fruit salad, ice cream or even eat alone.
