Italian Meringue (Buttercream)
Full recipe;
- 5 eggs white
- 250g sugar
- 1 teaspoon vanilla
- 1/2 cup of water
Half recipe:
- 3 eggs white.
- 150g sugar
- 1/4 cup of water
- 1/2 teaspoon vanilla
Pour in a small pan the thermometer, sugar and water. DO NOT STIR.
Put the pean in a medium heat till the syrup reach 245o.F.
Pour the syrup slowly and stead speed to the whipped eggs white. Beat 5/10 minutes
