The quinoa was qualified as the best food of vegetable origin for human consumption by the Academy of Sciences of the United States for its extraordinary nutritional value - comparing only to milk in protein value. Unlike wheat, quinoa contains no gluten is a great alternative to the diet in the diet of celiacs (people with gluten intolerance or allergy). Properties of Quinoa
- Source of amino acids. It has all the necessary amino acids to our body, including those that the body does not produce naturally.
- A source of high quality protein.
- It contains vitamins A, B1, B2, B3, B6, C and E.
- It has minerals such as iron, phosphorus, calcium, magnesium, potassium, zinc and manganese.
- High energy, low fat and high fiber.
- Rich in omega 3 and 6.
- It has phytoestrogens, natural substances similar to the action of certain hormones, helping to alleviate the symptoms of PMS and menopause.
Benefits of Quinoa
Quinoa acts in the prevention of chronic diseases, such as osteoporosis, heart disease and other changes resulting from the lack of female estrogen at menopause.
Regular consumption of quinoa helps fight anemia, urinary problems, tuberculosis and liver disease. Here there is a delicious recipe I have developed. It is tested and approved for me and my sweetheart! Enjoy!
Tabbouleh with Quinoa
- 1 medium cucumber chopped,
- 1/2 cup quinoa,
- 1/2 cup chopped mint,
- 1/4 cup green onions,
- 1 cup chopped red onion
- 1 cup chopped tomatoes,
- 3 tbsp extra virgin olive oil,
- juice of 1/2 lemon
- salt, vinegar and pepper to taste
Preparation:
1) Cook the quinoa according to package directions. Leave aside to cool.
2) Mix the following ingredients, cucumber, parsley, chives, mint, onion, red bowl on a part,
3) Add the quinoa with the others ingredients in a bowl and season with olive oil, lemon, vinegar, salt and pepper.
4) You can decorate with lemon slices and lettuce leaves.
