I'm so glad that I got it to make a delicious tomato sauce as the Italian mamas does!
Since that "I can remember", we used canned sauces done which we buy in groceries. My mama did not have time to spend hours and hours making sauce, because she had to work to have money to take care of me and my brother, since my father passed away so early, I was 7 years old. But... since nobody is orphaned of God, I have been immensely blessed because the Lord turns up seemingly bad things in blessings! Here I share this delicious recipe for Homemade Tomato Sauce. This recipe is for about a liter, but you can fold it to make larger quantities and to freeze. You just need to be patient because you will need at least 2 hours or more to have it done!
We need to recover the pleasure of waiting "things" be ready and on point. Nowadays everything is so disposable, we want everything to "yesterday", which ends up creating much anxiety if we do not have all the time, all ready!
Ingredients:
- 1 tablespoon butter
- 1 medium chopped onions, grated
- 3 small garlic clove, finely chopped
- 2 stalks celery, finely chopped
- 2 kg of mature tomatoes (about 15 fine red tomatoes)
- 1 sheered carrot
- 1 liter of water
- 1 bay leaf
- Basil to taste,
- salt and pepper to gusto
The seeds of tomatoes can be removed by cutting from top to bottom, or you can leave them.
Chop the tomatoes and set aside.
Chop the onions, garlic and celery.
Bring a large pot over high heat and melt the butter.
Add the chopped onions and garlic, stir well and add the celery.
Add the tomatoes slowly, about a cup at a time, until soft. Then add the carrots.
When the tomatoes begin to boil, lower the heat and let the pan half covered.
Stir the water.
Add a little salt and pepper freshly ground.
You may leave 1 to 2 hours cooking to reduce the water and thicken the broth.
You can blender everything in a blender or just 3 cups of sauce and leave the rest to the pieces thoroughly cooked and soft.
You can freeze part in a ice tray, to use when you need. After froze you can put in a plastic bag.
